The quality of fruits and vegetables for fresh consumption is a complex issue. While their nutritional composition is a primary factor for defining food quality, the external appearance of fruits, particularly their colour and properties such as firmness and pericarp thickness, also play an important role in the quality evaluation, especially as far as consumer acceptance is concerned.
