Quality Characteristics of Blackberry Fruits – An Experimental Study

Blackberry fruits are rich in phenolic compounds such as phenolic acids, flavonoids, and anthocyanins. The phenolic compounds in berries have been reported to have an antioxidant, anticancer, antiinflamatory, and antineurodegenerative biological properties. The objective of this paper was to investigate the technological quality such as moisture, volatile matter, oil and impurities, specific weight of the blackberry.
